Will Sala de Despiece fans find the same old hits or is it a complete reset? ‘At the moment everything is different, but we might use things from other venues as a tribute. We have a rolex that is not a rolex, although it has the same ingredients…. We are going to contradict ourselves all the time’, explains Javier Bonet to El País. The product focused on local products such as young beef from Ávila and the name of the chef Javier Lafuente are some of the clues revealed by the founder.
To preserve the mystery, they will provide bags at the entrance where customers can keep their mobile phones.
