The Barcelona EDITION will revolutionize the city’s culinary scene with the introduction of its new executive chef, Pedro Tassarolo.

This summer, with the reopening of The Barcelona EDITION, the hotel will revolutionize the city’s culinary scene with the introduction of its new executive chef, Pedro Tassarolo. It is he who is revitalizing the way locals and visitors alike dine out in the city. In charge of redefining the hotel’s popular establishments; Bar Veraz and The Roof, Tassarolo has drawn on his extensive experience; having trained at Mugaritz (Basque Country) and the world-renowned El Bulli; to bring to the city a unique gastronomic style, inspired by local culture and his own personal experiences around the world; focusing on the flavors of Asia in particular.

BAR VERAZ

Drawing inspiration from the hustle and bustle of Barcelona and focusing on the provenance of the raw ingredients sourced from local suppliers in the neighboring Santa Caterina market; Tassarolo has transformed Bar Veraz into an unpretentious restaurant where locals and guests alike can enjoy honest, innovative dishes meant to be shared among all diners. Inspired by the crowded tables of traditional tapas bars, Bar Veraz‘s dynamic and approachable menu encourages the socializing that has been sorely missed. With a mix of perfectly executed small and large plates, it pays homage to Spanish and Mediterranean culinary traditions.

Located on the first floor of the hotel, diners are invited to enjoy Tassarolo‘s selection of tempting dishes in a variety of spaces, from the contemporary dining room to the intimate bar area or on the outdoor terrace overlooking the neighboring Santa Caterina market. The menu features familiar flavors such as the Bravaz Veraz’ (€5), with special house brava sauce and aioli; or the ‘Red Tuna Tartar’, marinated Mediterranean bluefin tuna with piparra pepper sauce, Iberian lard and quail egg yolk (€16); as well as signature sharing plates such as ‘Pulpo Veraz’, octopus with smoked De La Vera paprika oil, garlic confit, creamy celery puree, crispy fennel and asparagus salad (42€). Also of note is the ‘Dry Aged Rib-Eye’, a piece of rib-eye specially selected by the butcher at Santa Caterina market, accompanied by sauce.

The sense of calm and tranquility extends to each of its 100 sophisticated rooms and suites. All offer the memorable comfort, ordinary style and exceptional level of service in a truly personal atmosphere for which EDITION is renowned. In addition, it includes a selection of rooms with breathtaking views of the iconic rooftop of the Mercat de Santa Caterina; an architectural masterpiece by the Miralles-Tagliabue studio. The hotel also offers different combinations of connecting rooms for travel with family or friends; as well as spacious and exclusive suites located in the penthouse of the hotel with wonderful panoramic views from their private Mediterranean terraces. All of them fully furnished to relax or dine outdoors while contemplating the city of Barcelona.

The Barcelona EDITION is also home to one of the most desirable places in the city, especially when the sun is shining: The Roof. This is the hotel’s tenth-floor terrace, a small Mediterranean-style oasis in the heart of the city. It has a truly unique panoramic view of the sea, the rooftops of the small historic buildings in the Gothic heart of the city; the unmistakable silhouette of the Basilica of Santa Maria del Mar or the colorful and undulating roof of the Mercat de Santa Caterina. The abundant vegetation, its colorful bougainvillea and the profusion of plants and flowers give the ambience an irresistible garden-in-the-sky feeling in which to enjoy the small Asian street food dishes served by its kitchen; designed to be shared with friends, couples or families.

Chimichurri, crispy potatoes and green market salad (65€). For those with a sweet tooth, there is a delicious selection of desserts including a ‘Dark Chocolate Fondant’ with 70% Guanaja chocolate and gianduja ice cream (€8) and ‘Summer Peaches’ with almond foam and Amaretto (€7).

This impressive all-day dining restaurant revolves around a captivating wood-paneled bar; which offers an impressive selection of regional and organic wines, craft beers and local vermouths.

THE ROOF

Located on the tenth floor of The Barcelona EDITION, The Roof is one of the most desirable meeting places in Barcelona. It boasts unparalleled panoramic views of the city and the Gothic Quarter and the Born district. The innovative menu of snacks, drinks and brunch specials; for guests and locals alike, can be enjoyed all year round in this unique oasis. The Roof remains open rain or shine, as retractable glass walls provide shelter from the elements, allowing The Barcelona EDITION to have one of the few year-round open terraces in the city.

The atmosphere, combined with the distinctive setting, is electric and inspired by Tassarolo‘s desire to evoke personal memories of travels in Asia. The menu pays homage to the street food traditions of Japan, China, South Korea, Thailand and Vietnam; while especially honoring the relaxed, contemporary spirit of those who gather there to enjoy long, lazy brunches and warm sunsets.

The Roof‘s all-day menu is designed to be enjoyed poolside while overlooking Barcelona’s El Born neighborhood; known as the city’s creative hub in the famous Ciutat Vella district. The style and energy of El Born vibrates throughout the hotel and has greatly influenced Tassarolo‘s menu. Thus, the chef has included Asian-inspired dishes such as ‘Bao de cerdo ibérico’: a steamed bun with Iberian pork, pickled cucumber and Cantonese hoisin sauce (€7); ‘Red tuna lettuce ssam’, a Korean-style lettuce wrap with Mediterranean red tuna loin, avocado and spicy gochujang mayonnaise (€8).

Brunch is available every Saturday and Sunday between 11:00h and 16:00h. In addition, it offers original dishes that will become everyone’s favorite; such as the ‘Kimchi Cheesesteak’, a piece of rib with brioche bread, homemade kimchi and Mao cheese (13€). There is also the ‘Polo de Lichi y Violeta’, (5€) for warmer days. The delicious menu includes a wide selection of local, national and international wines, as well as cocktails made by the best bartenders.

Speaking about his appointment, Tassarolo said, “I am very excited to bring my passion for honest, seasonal cuisine to Bar Veraz and The Roof. The new menus pay homage to traditional Catalan cuisine from a unique perspective; based on my own personal and professional experiences in the Mediterranean and beyond. My menus have been carefully developed to foster sociable and memorable dining experiences that celebrate the local culture of sharing food with whomever you want. The dishes I have created encompass the unique creative energy of El Born. I wanted to showcase it through a thoughtful variety of small plates and sharing plates. To do this, I use some of the incredible ingredients that I personally choose from some of the most talented producers and suppliers in the world; those found in the Santa Caterina market.”
